Superfood: Kale

It’s no secret that kale is one of the healthiest vegetables out there. You can add it to a smoothie or a salad for a powerful kick full of antioxidants. Kale is full of carotenoids and flavonoids, which are antioxidants that promote anti-cancer benefits. Kale also promotes eye health, and cooked kale is rich in fiber that helps reduce the risk of heart disease and lower blood cholesterol levels.

One cup of kale has only 36 calories, 5 grams of fiber, 15% of the daily requirement of calcium and vitamin B6, 40% of magnesium, 180% of vitamin A, 200% of vitamin C, and 1,020% of vitamin K. This powerhouse vegetable is also a good source of the minerals: copper, potassium, iron, manganese, and phosphorus.

Try making a yummy kale salad that’s easy to put together. You will need:

1 bunch of kale, chopped
2 oranges
3 tbsp of extra virgin olive oil
1/2 avocado, sliced
2 tbsp of sliced toasted almonds
pinch of sea salt
pinch of black pepper

To make the dressing, simply put together the juice of an orange with the olive oil, a pinch of sea salt and pepper. Stir.
For the salad, peel the other orange and separate the sections. Chop orange sections and put in a bowl with the kale, avocado and almonds.
